Just like the carrot, the beet was first cultivated along the Mediterranean and became part of the Estonian diet in the 19th Century. Thanks to its intense colour and sweet taste, the beet has found its way on to the menus of Tallinn’s top gourmet restaurants. You will find beets as the main ingredient in soups and salads such as rosolje – always popular at family gatherings. And did you know that in times past girls used to rub beet slices on their cheeks and lips to get a nice, red hue?
